We use high quality Felchlin couverture (Swiss chocolate) and Callebaut couverture (Belgian chocolate) Do not store in regular fridge since chocolate is highly absorbent and will take in all the flavors of the fridge, if you have wine fridge it is safe to store your chocolate there or in room temperature about 65-72F.
