4-Piece Bonbon Collection for White Wine Pairing

Bright, elegant, and beautifully balanced—this 4-piece bonbon collection is thoughtfully designed to complement crisp, aromatic, and fruit-forward white wines. Each handcrafted chocolate enhances the acidity, minerality, and delicate sweetness found in your favorite whites.

Tangerine & Honey Ganache –This ganache is smoother and lighter than a typical chocolate ganache:

  • Flavor profile:
    • Fresh, zesty citrus from tangerine
    • Gentle floral sweetness from honey
    • Creamy, velvety texture (often made with white chocolate or cream)
  • Texture:
Silky and melt-in-your-mouth, with a slightly glossy finish
  • Overall impression:
Think of it as sunny and elegant—not overly sweet, with a refreshing lift from the citrus
Best with: Riesling, Chenin Blanc, Sauvignon Blanc, Pinot Grigio, Prosecco, demi-sec Champagne

Passionfruit Caramel & Vanilla Ganache –This bonbon is sweet, creamy, and slightly tart, so you want a wine that either matches the sweetness or complements the acidity.

  • Best with: Sauternes-Rich, honeyed, and luscious—pairs beautifully with caramel and vanilla while complementing the fruitiness.
  • Moscato d’AstiLight, slightly fizzy, and fruity—echoes the passionfruit without overpowering the dessert.
  • Late Harvest Riesling-Sweet with bright acidity, which matches the tart passionfruit and balances the caramel.

Strawberry Pâte de Fruit & Basil Ganache – bright, jammy fruit with a fresh herbal twist and creamy chocolate. The wine pairing will highlight the strawberry’s sweetness, respect the basil’s green notes, and not overpower the ganache.

  • Strawberry pâte de fruit → sweet, slightly tart, concentrated berry flavor
  • Basil ganache → creamy, aromatic, lightly herbal and fresh

Best Match:

  • Brachetto d’Acqui- Lightly sparkling, sweet, and full of strawberry/rose notes—this is almost a perfect mirror of the dessert.
  • Rosé d’Anjou-Soft sweetness with red berry flavors and enough acidity to keep things fresh.
  • Moscato d’Asti-Floral and slightly fizzy—pairs beautifully with basil’s herbal lift and doesn’t overpower the strawberry.
  • Gewürztraminer-Lychee, rose, and spice notes complement both the fruit and the herbal ganache in a more exotic way.
  • Late Harvest Rosé-Concentrated berry sweetness that matches the intensity of pâte de fruit.

Brown Butter Ganache & Almond praline –

Brown Butter Ganache & Almond Praline is rich, nutty, and deeply caramelized—so your wine should either match that toasted sweetness or cut through it with acidity.

  • Brown butter ganache → warm, nutty, slightly toasty with creamy chocolate richness
  • Almond praline → crunchy, caramelized sugar + roasted almond depth
Best with:
  • Vin Santo-Classic pairing with nuts and caramel—has almond, honey, and dried fruit notes that mirror the praline beautifully.
  • Amontillado Sherry-Dry but deeply nutty and complex—echoes the browned butter and roasted almonds.
  • Sauternes-Honeyed richness with enough acidity to balance the ganache without overwhelming it.
  • Tokaji-Apricot, caramel, and spice notes elevate the dessert’s depth.
  • Late Harvest Riesling-Bright acidity cuts through the butter and caramel, preventing it from feeling too heavy.

This collection delivers a refined interplay of sweet and savory—perfect for wine tastings, elegant gatherings, or as a distinctive gift for the white wine enthusiast.
